My mom must be one special mom for me to be revamping all these lovely gluten-free recipes for her. She bought this Stonewall Kitchen Gluten-Free Cinnamon Sugar Doughnut Mix, 18 Ounce Box a while ago. I have never made donuts before not even baked ones like the ones I am making so this is a first time for me.
You have your box of donut mix, coconut milk, coconut spread here. She no longer can have milk or butter so I am substituting them with coconut dream and earth balance coconut spread. Melt the coconut spread and add the ingredients into a bowl.
Add all of the ingredients and mix it well.
My mom also bought a pan very similar to this Fox Run Non-Stick Mini Donut Pan. Take coconut spread and rub on the pan so that the donuts won't stick. Take a spoon to place the mix into the baking pan. I needed to do this twice because this is mini donuts instead of the regular sized ones.
Leave in the oven for 10-15 minutes on 375F and take them out. In the Stonewall Kitchen box, there is a pack of cinnamon sugar. Dip the baked donuts into melted bowl of coconut spread and roll it into the cinnamon sugar. Let cool and enjoy!
